Sweet Green Smoothie Recipe
About five years ago, I started routinely making smoothies as a way to ensure I was getting fresh fruits and vegetables in my diet on the reg. Up until that point, nutrition hadn't been a huge priority in my life. My relationship with food was about taste and joy. But while I was taking a college course on the global food economy, I was inspired to switch up my eating habits.
I wasn't idealistic or overly ambitious about changing my diet, though. My attitudes toward food had been largely influenced by my family and our affinity for all things buttery, salty, and flavor-forward. To assume I could abandon all that overnight would've been setting myself up for failure. But I knew I could do better.
Initially, I treated smoothies like taking daily medicine. Coming off of my former diet, I knew green drinks were certainly going to be an acquired taste. So, I put some healthy stuff in a blender and essentially held my nose while I gulped it down. Over the years, though, I've fine-tuned my smoothie making skills to create some recipes that I actually enjoy tasting! This sweet green smoothie bowl is one of them.
Kale (1-2 leaves de-stemmed. rinse under warm water to help the kale blend more easily)
Chia seeds (1 tbs)
Silk Almond & Coconut Milk Blend (~ 2 cups)
kiwi, coconut shavings and dried cranberries
